Kickin Veggie Scramble w/ Cinnamon Apricots
There’s just something about cooked fruit that puts me in a good mood. In this case, cinnamon apricots. Yum! This easy breakfast covers a range of micro and macronutrients and is sure to keep you satisfied till lunch.
1. In a skillet heat olive oil. Toss in broccoli and zucchini. Sprinkle with garlic powder, cheyenne pepper (hence the name Kickin), salt and pepper. Sauté 5 min. Arrange veggies on plate.
2. Using same skillet, add a little more oil and cook scrambled eggs to desired firmness. Arrange on plate with veggies.
3. Clean skillet and heat coconut oil. Dice 1 ripe apricot into large chucks. Add to warm skillet and sprinkle with cinnamon. Sauté 5 min. Serve warm.
The apricots are the best part so save those for last. Or first, if you’re a eat your cake first kind of person.
