Day 15 and I am honestly amazed at how good I look and feel. I am probably down about 5-7 pounds, but I haven’t weighed myself. Rules are rules.

No pain in my back or hips. Energy throughout the day. Mild cravings, but it has gotten easier to say no. I’m really impressed and proud of the results.
I wish I would have done this years ago!
Chicken Fajita Salad
Ole Fajita night! While my family was enjoying their fajita tacos with flour tortillas, I was in heaven with this paleo approved version. Chicken, bell peppers, shredded lettuce, cherub tomatoes, avocados…topped with salsa of course! So good!
After all this blog is called Primpin & Paleo! And no I didn’t eat breakfast with a face mask on; face mask came after breakfast. This combo along with some yoga was a great way to start my day.
Breakfast was my usual 2x2 - 2 eggs, 2 slices bacon with my Energizing Tropical Green Tea Smoothie.
Energizing Tropical Green Tea Smoothie
- 1 cup flavored green tea like Lipton Peach Passion Green Tea.
- 3 strawberries
- 1/4 cup frozen pineapple
- 1/4 cup frozen peaches
- 1/4 cup frozen mango
- 1 handful baby spinach
1. Allow 1 teabag to seep in 1 cup water for about 5 min
2. Blend all ingredients until smooth.
Avocado & Egg White Face Mask
- 1/2 ripe avocado, mashed
- 1 egg white
- 1 teaspoon lemon juice
1. Mash the avocado to make smooth paste.
2. Now mix egg white to the paste and then add lemon juice and mix until smooth.
3. Spread this mixture on the neck and face evenly and massage it well into the skin.
4. Allow it to sit on the skin for about 20 minutes and then rinse it off with warm water, pat dry.
You skin now becomes oil free. Egg whites usually clear the oil and grime that get accumulated in the skin pores. It also reduces oil production. Lemon juice will exfoliate and the avocado will leave your skin soft and brightened.

Perfect Paleo Breakfast Fritters
This morning’s breakfast was the perfect combination of slow releasing carbs, protein, and fat. The recipe yields one fritter, but could easily be doubled or tripled for more.
1/2 cup shredded sweet potato ( I used a vegetable peeler)
1 slice nitrate free, hormone free ham deli slice diced (Applegate Naturals is my fav)
1 egg
Time to get messy! Combine all ingredients in a bowl using your hands. Egg yolk should be mixed in. The mixture will be thick and slimly.
Pour mixture into hot, greased skillet. I used bacon drippings, but any natural oil will be fine. Be sure to pour in a patty / pancake shape. Flip after 5 minutes. Cook on medium high heat 15 minutes. Garnish with diced avocado.
Back to Reality
Finally back from vacation and back to reality. After two weeks eating paleo, I went from 130 to 125. After a week of vacation I went from 125 back to 130.
I don’t regret the food choices I made, but I am ready to get back to eating paleo. After making this morning’s simple, but yummy bacon and egg scramble I realized it’s gonna take a while to get back into prepping and cooking mode.
Las Vegas Style
Finally, we get a vacation! My husband and I are celebrating our 1st Anniversary, exactly where we got married at the fabulous Wynn.
Had a great Cobb salad with lemons as my dressing as lunch. Vodka & water is the drink of choice this trip. Heading out for happy hour sushi at Ra.

Vegas bound in t-minus three days! To make sure I’m ready to be poolside, I’m going on a 2 day detox.
The Plan:
3x per day: 2 scoops Plant Based Vega Energizing Smoothie mixed in 16 oz of water (184 cals, 4g fat, 16g carbs, 10g fiber, 20g protein)
Drink 3 litters of water
Snacks: fresh fruit & veggies
The hope is this will cut my caloric intake, but the fiber and protein will keep me satisfied. Light yoga / pilates and a mile walk will be my daily activity. Fingers crossed!
Quick Turkey Salad
I’m pretty sure cavemen didn’t eat salads, but this quick summer salad keeps me on my paleo plan. I decided not to go out for lunch today and since the kitchen is bare (vacation in 2 days!), I threw together whatever i had left.
Shredded lettuce, spinach, kalamata olives, baby carrots, nitrate free uncured bacon, Applegate Natural’s Oven Roasted Turkey Breast, squeezed lime juice, and olive oil drizzle.
I love that very few of my food choice these days come in a package! Paleo Power!
Creamy Tropical Fruit Bars
Here’s to summer! Summer is by far my favorite season and it’s not because i have 2 months out of work. These creamy treats were a big hit with my family.
Recipe Yields 4
5 strawberries
1 peach
1/2 cup pineapple
1/4 cup coconut water
1/4 cup unsweetened coconut milk
Blend all ingredients until chunky. You can add some raw honey if you’d like, but my fruit was so sweet i didn’t need it. Pour into popsicle molds and freeze for 2-3 hours.
Zucchini & Sweet Potato Stack topped with Dippin Eggs, Bacon, & Avocado
Why does egg yolk make everything so yummy?! Growing up my dad called over easy eggs “dippin eggs” because we would dip our sausage links or bacon in the yolks.
I made this delicious concoction for breakfast yesterday. It was super filling and tasted great. I’m a well done kinda girl so the charred, aka burned pieces, were part of my plan.
Yields 1 serving
2 slices nitrate free, sugar free bacon
2 cage free, organic eggs
1/2 cup sweet potato, thinly sliced
1/4 cup zucchini, thinly sliced
1/4 avocado, sliced
Coconut Oil spray
1. In a large skillet, cook the bacon to desired crispiness. Set bacon aside on a paper towel to drain.
2. Drain the grease but leave about a teaspoon for cooking veggies. Combine sweet potatoes and zucchini in skillet. Cook over medium heat for 7-10 min until tender.
3. Arrange sweet potatoes and zuchini in a pile on a plate. Wipe skillet with a paper towel.
4. Spray light layer of coconut oil and fry eggs to desired taste. I prefer over medium.
5. Stack eggs on top of the sweet potatoes and zucchini. Top with bacon and avocado.
