Spice Rubbed Chicken with Peachy Guacamole
Dinner tonight was the bomb.com! My husband FINALLY bought more propane for the grill. And I must say, it felt great to be grilling again. Nothing says summer like grilling in the backyard.
Chicken:
1. Mix sea salt, ground cumin, ground pepper, and garlic powder to your liking.
2. Rub onto pounded, all natural, boneless, skinless breasts.
3. Grill on medium heat until opaque throughout.
Peachy Guacamole:
1/2 peach diced
1/4 cup diced pineapple
1 diced avocado
1 tablespoon finely diced red onion
1/2 lime, squeezed
Combine all ingredients in a small bowl. I used frozen peaches and pineapple. Just be sure they are unsweetened.
Top chicken with guacamole and serve with your fav sides (shown: green beans with slivered almonds and sweet potato chips).
